Agua Mágica and Aldo Sohm Introduce a Rare Mezcal Aged in Austrian Dessert Wine Barrels

In the world of luxury spirits, innovation often begins when tradition meets an unexpected perspective. That philosophy is at the heart of a distinctive collaboration between Agua Mágica and internationally celebrated sommelier Aldo Sohm.

Together, they have introduced Reposado Edición Limitada, an artisanal mezcal that brings the heritage of Oaxaca together with the sophistication of Austrian winemaking.

With only 750 bottles produced and a retail price of $250, the release is designed for discerning spirits enthusiasts seeking something beyond the conventional.

A Meeting of Two Worlds

Aldo Sohm is no stranger to excellence. As wine director at New York City’s acclaimed three-Michelin-starred Le Bernardin, Sohm has built an international reputation for his extraordinary understanding of wine.

Named Best Sommelier in the World in 2008, the Austrian-born wine expert has spent decades exploring how terroir, craftsmanship and aging influence the character of exceptional beverages.

For this collaboration, Sohm joined forces with fifth-generation maestro mezcalero Don Rogelio Juan Hernández, whose expertise reflects generations of traditional mezcal production in Oaxaca, Mexico.

The partnership represents more than a celebrity collaboration. It is an exchange of expertise between two disciplines, each rooted in patience, precision and respect for raw ingredients.

The Art of an Unusual Aging Process

What makes Reposado Edición Limitada particularly remarkable is its unconventional maturation.

The mezcal begins with a carefully selected blend of 66.6% Espadín and 33.4% Tepeztate agave, traditionally cooked in a stone oven, crushed using a tahona and fermented with wild yeast.

Following double distillation in copper pot stills, the spirit is aged for approximately eight months in Caucasian oak barrels previously used to mature Austrian Trockenbeerenauslese dessert wine.

These barrels originated from Sohm & Kracher, Sohm’s winemaking partnership with Austrian producer Gerhard Kracher.

The wine’s concentrated fruit and honey characteristics influence the mezcal’s aromatic complexity while allowing its underlying agave identity to remain present.

After barrel aging, the mezcal rests for approximately nine additional months in glass, allowing its characteristics to integrate before bottling.

A Sophisticated Tasting Experience

The resulting 88-proof spirit offers a distinctive expression of mezcal, balancing traditional Oaxacan character with nuances associated with fine dessert wines.

Its reported tasting profile includes candied citrus, caramel, dried fruit, roasted agave and baking spices, complemented by subtle vegetal and savory notes.

Unlike expressions dominated by intense smoke, this release emphasizes balance and layered complexity.

The spirit is particularly suited to sipping neat, allowing the influence of the agave, fermentation and distinctive oak maturation to emerge gradually.

Luxury in the spirits industry is increasingly defined by more than elaborate packaging or prestigious names. Provenance, craftsmanship, limited production and compelling stories have become equally important.

Agua Mágica’s collaboration with Sohm brings these qualities together, demonstrating how traditional mezcal production can engage with international wine culture without abandoning its origins.

For collectors, sommeliers and enthusiasts of rare spirits, Reposado Edición Limitada offers an opportunity to explore a different expression of agave craftsmanship.

The PMG Perspective

What makes this release compelling is not simply its scarcity, but the dialogue between two traditions. The mezcal remains fundamentally Oaxacan, while its Austrian wine-barrel influence introduces an unexpected layer of refinement.

It is an example of how modern luxury can celebrate heritage while embracing thoughtful experimentation.
